History

Scratch began as a post-modern mom, pop and standard-issue-store-kid business many moons ago and has been around for long enough to have experience a lot of growing pains and evolution. We are currently something more akin to a motley band of loveable pirates led by "mom," the fearless Captain. Featuring components of bakery, smokehouse, and charcuterie forged into a wood-fired, brick oven pizzeria. Located in a lovingly restored 100 year old house in Johnson City's historic North Roan district.

We do most of our cooking with wood in our massive 100 ton brick and riverstone oven. In the "before time," we specialized in making crusty, sourdough hearth breads, experimental charcuterie, wild desserts like the infamous "habanaro cheesecake," and all things tasty and wonderful but always changing. Nowadays, we are much more limited in our offerings and have focused on channelling our knowledge and history into making the perfect pizza. With house-cured meats like peperone (our nod to the old style) and capicola, housemade sauces and dough, the magic comes together when it hits the 900 degree heat of our Alan Scott Brick Oven, built, in Scratch-style, by our own hands.
